I love salads, from a simple mixed green side to counter a rich steak to a colorful meal of chopped veggies from the garden. Unfortunately my husband does not share my enthusiasm when I mention a salad so it has to be special. Over the years, I’ve managed to convince him that salads cannot only be OK but downright delicious. While he will never be the one to suggest us just having a salad for dinner, he will happily admit that he enjoys this special one.

This chopped chick pea, asparagus and vegetable salad tossed with creamy avocado and a honey-lemon vinaigrette and crumbled Gorgonzola is one he loved. It is now on our “make again” list so you know it has to be good.

Recipe: The Salad That Changed My Husband’s Mind

This vibrant chopped salad perfectly balances the crisp crunch of spring asparagus and summer sweet corn with hearty chickpeas, juicy tomatoes, and rich, creamy finishes. Ingredients

For the Salad

  • 1/2 bunch fresh asparagus, woody ends removed, cut into 1-inch pieces
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup sweet corn kernels (fresh off the cob or thawed frozen corn)
  • 1 cup cherry or grape tomatoes, halved lengthwise
  • 1 large ripe avocado, diced
  • salad greens, a large handful
  • 2 to 3 ounces Gorgonzola cheese, crumbled

For the Honey-Lemon Vinaigrette

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • zest of 1/2 lemon
  • 1 teaspoon honey (or more to taste)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Optional: Add a little of the crumbled cheese

Instructions

  1. Blanch the Asparagus: Bring a small pot of salted water to a boil. Drop in the asparagus pieces and cook for 60 to 90 seconds until vibrant green but still crisp. Drain immediately and plunge into ice water to stop the cooking. Pat dry.
  2. Whisk the Dressing: In a small bowl or jar, combine the olive oil, fresh lemon juice, honey, Dijon mustard, salt, and pepper. You can add a little of the cheese, if you wish. Whisk vigorously until the dressing is completely smooth and emulsified.
  3. Toss the Base: In a large salad bowl, combine the blanched asparagus, rinsed chickpeas, sweet corn, halved tomatoes and greens.. Pour the honey-lemon vinaigrette over the top and toss thoroughly to coat.
  4. The Final Touch: Right before serving, gently fold in the diced avocado and crumbled Gorgonzola cheese so they hold their shape and creamy texture. Serve immediately!

  5. This looks like a delicious salad! I’m a big salad fan, especially at this time of the year when I naturally want to eat lighter dishes.

    A recent favourite was a no-mayo potato salad with dill, lemon, capers and a honey-mustard dressing. So good!
