Brighten Winter Meals: Easy Lemon Pasta Recipe

When the winter chill sets in, vibrant flavors of citrus can add a burst of sunshine to the gloomy days. Lemon pasta is a comforting winter dish that balances the richness of butter and cheese with bright and zesty lemon. It can be a welcome change from heavier winter foods.

While lemons are available year-round, their peak season often coincides with winter. Known for their bright acidity, lemons can brighten any dish and are incredibly versatile in the kitchen.

When using lemons in cooking, use both the lemon zest and juice for a deeper, more complex lemon flavor. The zest contains essential oils that infuse a sauce with fragrance. Lemon zest can also enhance the flavor of your favorite baked goods. You can create a zesty lemon vinaigrette for salads or make a classic lemon curd for a wonderful dessert.

Quartered Fresh Lemons

Known as pasta al limone in Italy, lemon pasta takes only minutes to prepare with the most basic of ingredients. It can be served as is or add protein like cooked shrimp or chicken. You can also include additional fresh herbs for extra flavor.

This pasta is creamy without the use of cream. The pecorino romano cheese adds a delightful creaminess to the dish. However, if you want, add a splash of heavy cream or half-and-half. While not traditional, it will make a richer, more decadent sauce that feels more substantial on a cold winter evening. The acidity helps cut through the richness and keeps the dish from feeling heavy. Making it is very easy. This simplicity makes it perfect for a quick weeknight dinner. You can have it on the table in under 30 minutes.

.Lemon Pasta (Pasta al Limone)

Serves 2 as a main dish, adjust the recipe accordingly

  • 2 Tbsp. butter (olive oil may be substituted)
  • 3 Tbsp. extra virgin olive oil
  • 2 cloves garlic, minced
  • pinch of red pepper flakes or to taste
  • finely grated zest and juice of 1 lemon or to taste*
  • 1 – 2 Tbsp. parsley, minced
  • salt and pepper to taste
  • 1/2 lb. spaghetti or pasta of your choice 
  • 1/4 – 1/2 c. grated Pecorino Romano cheese or to taste

*Lemons vary in size and juiciness. I suggest starting with half a lemon, then taste. I used the juice of a whole medium size lemon. (2 Tbsp.)

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Reserve 1/2 cup of pasta water.
  2. While the pasta cooks, heat butter and olive oil in a large sauté pan over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant for about 30 seconds.
  3. Then, add the lemon zest and juice to taste. Add the cooked pasta to the pan and about 1/4 cup of the reserved pasta water. Toss over medium heat to coat. For a richer sauce, add a pat of butter to the dish. and toss again.
  4. Remove the pan from the heat. Stir in the cheese, parsley, salt, pepper and any other desired additions. Taste and adjust the seasonings if necessary.

If you love lemons, the way I do, this dish is for you. Cheesy, comforting, and with a bright flavor, this pasta dish is perfect for a cold winter evening. . However, it is delicious anytime of the year. Lemon pasta can be served as either an appetizer, main, or side dish.

  1. This reminds me of a dish in KC that I enjoyed at our favorite Italian restaurant. It was light with the fresh taste of lemon. It may have had a little bit of cream but it sounds a lot like your recipe. I will have to try your recipe!

  6. This looks much like what I make when I’m riffing on lemon pasta, but I just wing it with no quantities! Thanks for that — it will be very helpful. (I’ve often hits, but sometimes misses, too!)
