Delicious 30-Minute Salmon Pasta In Lemon Cream Sauce

Salmon pasta in a light lemon infused cream sauce is perfect any time of the year. It is easy, fast, and delicious. It satisfies cravings for something creamy yet tastes fresh and full of flavor. A touch of cream adds richness, lemon brightens up the sauce and pairs perfectly with the salmon.

Salmon can be found in cold water regions all around the world. This makes salmon one of the world’s most popular fish. Pasta is universally loved and goes beyond borders and cultures. Combine the two ingredients in a garlicky, lemon cream sauce. You instantly create a popular evening meal for your family. What makes this dish even more enticing is the ability to prepare it in 30 minutes. It is perfect for a weeknight meal. It is also suitable for a special occasion anytime of the year.

If you are worried about the cream and butter used in this recipe, do not fret. There is just over a tablespoon per serving. That is balanced out by the fact that salmon’s omega-3 fats are very heart-healthy.

Of course you can remove both if needed for health reasons. Instead of cream, half and half or evaporated milk can be substituted. Low fat yogurt can also be substituted. But, it must be added at the end and off the heat. This will prevent it from separating..

This pasta and salmon dish is tossed in a delicious garlicky, lemon cream sauce. It can be on the table in 30 minutes, making it perfect for a weeknight dinner. The delicate flavor of this pasta with the lemon cream sauce is versatile. It would also be great made with shrimp or scallops in place of the salmon.

Salmon Pasta In A Lemon Cream Sauce

Recipe serves 2 generously as a main course or 4 as a first course.

Salmon

  • 4 – 6 oz. fresh skinned salmon filet
  • 1/4 tsp. salt and pepper or to taste
  • 1 Tbsp. each olive oil and butter
  1. Pat the salmon dry with a paper towel. Then season generously with salt and pepper.
  2. Heat a nonstick sauté pan over medium high. Add the oil and butter. When the butter is melted, sear the salmon, skinned side down, for 4 minutes. Turn and cook for another 2 minutes. It is important to not overcook the salmon as it will cook further in the sauce.
  3. Remove from the pan and set aside while you cook the pasta.

Pasta

  • 3 oz. dry spaghetti, linguine, or fettuccini per person (amount depends on personal preference)
  1. In a large pot of boiling salted water, cook the pasta according to package directions until al dente.
  2. Drain the pasta and reserve about 1 cup of the pasta cooking water. While the pasta is cooking, prepare the sauce.

Sauce

*The sauce is enough for 2 main servings but can easily be doubled.

  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1/2 small onion, chopped fine
  • 3 garlic cloves, minced
  • 1/8 tsp. onion powder
  • 1/8 tsp. garlic powder
  • 1/4 tsp. salt and pepper or to taste
  • zest of 1/2 lemon
  • 1/4 c. dry white wine, broth can be substituted
  • 1/4 c. cream
  • juice from 1/2 fresh lemon or to taste
  • 1 c. reserved pasta water, as needed
  • 1 Tbsp. minced fresh parsley, as garnish
  1. Melt a tablespoon of butter with the oil. Add the onion and cook for a few minutes until softened. Then add the garlic and cook for 30 seconds until fragrant.
  2. Add the seasonings, lemon zest and white wine. Cook until reduced by half.
  3. Add the cream and lemon juice, then taste and adjust the seasonings, if necessary.
  4. Simmer for a few minutes until the sauce coats the back of a spoon. Add the salmon back to the pan, breaking it up with a spoon.
  5. Add the cooked pasta. Add a little of the pasta cooking water to thin, if necessary, stirring until well coated and creamy. Serve and garnish with minced parsley.

This delicious meal is really is quick and easy. Most of the recipe can be accomplished while your pasta is boiling. You may have noticed that the recipe only calls for 4 to 6 ounces of salmon. This is enough for two very generous portions of pasta. I would suggest serving the pasta with a nice green salad. Include crusty bread and a glass of full bodied white wine and enjoy.
