Guilt-Free Double Chocolate Banana Cake with Pecans

This double chocolate flourless banana cake with pecans has no added sugar, instead getting its sweetness from very ripe bananas. It is a moist and delicious dessert that you can happily share with family and friends. You will not feel guilty because it is a healthy dessert.

A Gift Of Cake

If you follow this blog, you have probably read about my husband’s medical journey.  The left side of his pelvis was shattered in 4 places from a fall in the middle of the night. Surgery was necessary to reconstruct the pelvis and plates and screws were needed to restore stability. 

He has spent over two months in hospitals and rehab skilled nursing facilities healing. Unfortunately, it will take many weeks before he will manage to return home. We have been told that it will take a year for the bones to completely heal.

During these past months of hospitalization, our friends have been stopping by to visit. These visits help to keep his spirits up. Our friends have brought get well cards and flowers. They have also brought lots of tasty little treats, like cookies and cake.

One of our friends, John, stops by almost every day to visit my husband. Last week, he brought slices of homemade cake. The cake was from his lovely wife Nancy. She is known for her healthy cooking and baking. One of her healthy desserts is a flourless chocolate banana cake that she baked for my husband.

The moist cake was delicious and was hard to resist. It quickly disappeared with only a few crumbs left on the plate. Still, we didn’t feel guilty because the cake is gluten-free and doesn’t have any added sugar.

A Recipe For Sharing

Nancy included the recipe along with the chocolate banana cake. I felt that was a very nice gesture. To pay it forward, my husband and I thought it would be nice to share the recipe with my readers. I hope you will enjoy this easy to prepare cake as much as we did.

Flourless Double Chocolate Banana Cake With Pecans

Flourless Double Chocolate Banana Cake With Pecans

Preheat the over to 350 degrees

Ingredients

  • 3 bananas
  • 4 eggs, separated
  • 2 Tbsp. unsweetened cacao powder
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1/2 c. pecans
  • 1 c. semisweet mini chocolate chips
  • pinch of salt
  • 1/2 tsp. cream of tartar

Instructions: This cake is simple to make and very adaptable. If you don’t care for pecans, walnuts would make a great substitute.

  1. Grease and dust a 8-9 inch round or square cake pan with cacao powder.
  2. Separate the eggs, whites in a medium bowl and the yolks into a large bowl. Mash the bananas in the large bowl with the yolks.
  3. Add the cacao and blend with a stick blender.
  4. Add vanilla and baking powder and blend.
  5. Beat egg whites with a pinch of salt and/or the cream of tartar until there are medium peaks.
  6. Fold the eggs whites into the banana mixture.
  7. Pour into prepared baking pan.
  8. Sprinkle the top with chocolate chips and then cover with pecans.
  9. Bake at 350 for 35 – 40 minutes. Test for doneness, a toothpick inserted in the middle of the cake should come out clean.
  10. Let cool before slicing. Garnish with fresh berries, if you wish.

    I’m glad your husband is on the mend, albeit slowly. It makes such a difference to have lots of vistors to cheer him up. My aunt broke her leg last year and she had to have it in a fixed position for months and couldn’t go home or get out of bed. Fortunately it seems to be much better now.
