Fresh Sweet Corn Pico de Gallo With Sautéed Chicken

Corn Pico de Gallo served with sautéed chicken is a quick and easy summer meal. Fresh and chunkier than salsa, this recipe is also great with grilled meats or it can be served as a salsa with crispy tortilla chips, making it perfect for a backyard barbecue, pool party or potluck dinner.

In the summertime when the weather is hot, sultry and temperatures soar into the 90’s, we don’t feel like spending a long time in the kitchen and are all looking for quick, light weeknight meal ideas. I suggest trying this simple yet flavorful chicken dinner that can be on the kitchen table in about 30 minutes.

Fresh corn kernels cut off the cob, diced vine ripe tomatoes and crisp peppers are combined with a lime dressing to create a delicious and flavorful Pico de Gallo that has a taste of summer in every bite. Chunkier than traditional salsa, it makes a perfect accompaniment to serve along side a simple sautéed boneless breast of chicken but it would be equally good with a filet of fish and grilled or barbecued meats.

Sweet Corn Pico de Gallo

Serves 2, adjust recipe accordingly

  • corn kernels from 2 large ears of corn, raw or cooked until just tender crisp
  • cherry tomatoes, cut into quarters (I used about 6)
  • 1/4 of a sweet or red onion, chopped fine
  • 1 small orange or red sweet bell pepper, seeded and diced
  • 1 or more jalapeños, seeded and diced
  • 1/4 c. chopped cilantro or to taste
  • juice from 1 lime, about 3 Tbsp., lemon juice may be substituted
  • 1 – 2 Tbsp. olive oil
  • 2 tsp. sweet chili sauce (I used Frank’s)
  • salt and pepper to taste
  • a large handful of cilantro chopped

Whisk lime juice, oil, sweet chili sauce, salt and pepper together in bowl. Pour the dressing over the remaining ingredients except the cilantro and toss to combine. Let stand at least 10 minutes for the flavors to combine. Just before serving, stir in fresh cilantro, taste and adjust the seasonings if necessary.

Sautéed Chicken Breasts

  • 2 chicken breast cutlets
  • salt and pepper to taste
  • garlic powder, onion powder and cumin to taste
  • 2 – 3 Tbsp, olive oil
  • 1 clove of garlic, smashed

Place the chicken breasts between plastic wrap and gently pound just enough to even out the thickness. Season the chicken well with salt, pepper, garlic powder, onion powder and cumin. Heat olive oil along with 1 clove of garlic over medium high heat in a sauté pan just large enough to hold the chicken in one layer. Sauté the chicken cutlets for about 3 to 4 minutes on each side until golden and cooked through. Serve with a spoonful of the Pico de Gallo over the top of thr chicken and the remainder at the table.

      1. Growing up on the farm, we would pick corn early in the morning, shuck a basket full and that days meal would be corn on the cob and sliced tomatoes. Nothing tasted better!

    We are beyond the age where we can enjoy raw onion, but we’re not willing to give up this yummy condiment. So we sautee and cool the chopped onion before tumbling it into our salsa. This gives a subtle undercurrent of sweet richness to the bright flavors. It was a happy accidental discovery worth repeating. Roll on summer grilling season!
