Fresh Sweet Corn Pico de Gallo With Sautéed Chicken
Corn Pico de Gallo served with sautéed chicken is a quick and easy summer meal. Fresh and chunkier than salsa, this recipe is also great with grilled meats or it can be served as a salsa with crispy tortilla chips, making it perfect for a backyard barbecue, pool party or potluck dinner.

In the summertime when the weather is hot, sultry and temperatures soar into the 90’s, we don’t feel like spending a long time in the kitchen and are all looking for quick, light weeknight meal ideas. I suggest trying this simple yet flavorful chicken dinner that can be on the kitchen table in about 30 minutes.
Fresh corn kernels cut off the cob, diced vine ripe tomatoes and crisp peppers are combined with a lime dressing to create a delicious and flavorful Pico de Gallo that has a taste of summer in every bite. Chunkier than traditional salsa, it makes a perfect accompaniment to serve along side a simple sautéed boneless breast of chicken but it would be equally good with a filet of fish and grilled or barbecued meats.

Sweet Corn Pico de Gallo
Serves 2, adjust recipe accordingly
- corn kernels from 2 large ears of corn, raw or cooked until just tender crisp
- cherry tomatoes, cut into quarters (I used about 6)
- 1/4 of a sweet or red onion, chopped fine
- 1 small orange or red sweet bell pepper, seeded and diced
- 1 or more jalapeños, seeded and diced
- 1/4 c. chopped cilantro or to taste
- juice from 1 lime, about 3 Tbsp., lemon juice may be substituted
- 1 – 2 Tbsp. olive oil
- 2 tsp. sweet chili sauce (I used Frank’s)
- salt and pepper to taste
- a large handful of cilantro chopped
Whisk lime juice, oil, sweet chili sauce, salt and pepper together in bowl. Pour the dressing over the remaining ingredients except the cilantro and toss to combine. Let stand at least 10 minutes for the flavors to combine. Just before serving, stir in fresh cilantro, taste and adjust the seasonings if necessary.
Sautéed Chicken Breasts
- 2 chicken breast cutlets
- salt and pepper to taste
- garlic powder, onion powder and cumin to taste
- 2 – 3 Tbsp, olive oil
- 1 clove of garlic, smashed
Place the chicken breasts between plastic wrap and gently pound just enough to even out the thickness. Season the chicken well with salt, pepper, garlic powder, onion powder and cumin. Heat olive oil along with 1 clove of garlic over medium high heat in a sauté pan just large enough to hold the chicken in one layer. Sauté the chicken cutlets for about 3 to 4 minutes on each side until golden and cooked through. Serve with a spoonful of the Pico de Gallo over the top of thr chicken and the remainder at the table.

That corn pico looks terrific — especially with a nice grilled chicken! That sounds like a terrific seasoning mix.

Perfect meal for summer! I would eat corn and tomatoes all summer long; your corn pico is amazing!!
You made me laugh Jan, during summer we have made a meal of just corn on the cob and tomatoes when they are both fresh from the farm. 😊
Growing up on the farm, we would pick corn early in the morning, shuck a basket full and that days meal would be corn on the cob and sliced tomatoes. Nothing tasted better!
All those beautiful colors signal great flavors and fun times with friends.
We are beyond the age where we can enjoy raw onion, but we’re not willing to give up this yummy condiment. So we sautee and cool the chopped onion before tumbling it into our salsa. This gives a subtle undercurrent of sweet richness to the bright flavors. It was a happy accidental discovery worth repeating. Roll on summer grilling season!
Hi Mark, thanks for sharing your tip about the onion. I often do as you but usually it is when I’m using garlic and I want the flavor without the bite.
Ah…. the days long ago when I could eat garlic!
This corn Pico de Gallo looks so fresh and full of flavors. Perfect for a hot day. 🙂
Thank you Ronit, the sweet crispy corn was a delicious addition to the salsa.
Very refreshing!

Hi Dorthy, I know what you mean. Those first ears of fresh picked corn are great.
Looks perfect for Summer, Karen. I’ll have to wait until Winter passes here 😊
Hi Gary, I hope you get to enjoy it once your corn season makes its way to your hemisphere.

They say you eat with your eyes first so this dish certainly fits the bill! It’s absolutely gorgeous. I used to love the traditional pico de gallo with tomatoes but now I find I can’t eat tomatoes any longer so this corn-based recipe sounds perfect for me.
The corn salsa sounds like something I think you will enjoy Eva. I’m happy to share this recipe with you.
I never thought about making pico de gallo with corn before and now that seems like such a huge oversight! That looks amazing, I also can’t get enough of fresh sweet corn. Consider it on the to-make list, ASAP.

This recipe is right up our alley, Karen! Sweet corn has been plentiful around here the last couple of weeks, and I can’t get enough of it. I’ll have to try this pico for an easy weeknight dinner soon – it looks packed with summer flavor!
Hi David, I’m happy to know that the corn Pico de Gallo is a recipe that you want to try. Thank you, I hope you like it as much as we did.
I’ve never heard of corn pico de gallo, Karen, so I’m really excited to try your recipe. We used to help my Granny put up creamed corn every summer and oh my word my arms hurt just thinking about it ha ha. I don’t know what she put in that stuff but it was amazing and I know this recipe will be too. Hugs, CoCo
Hi Coco, this is something a little different to do with fresh corn. I bet your Granny’s creamed corn was great, it is a shame when we don’t have family recipes that we loved so much.
I would love a plate of this along with your warm weather too! Corn pico de gallo is such a great idea. It reminds me a bit of succotash.
Hi Lorraine, You are right, the corn pico does remind you of succotash…but fresh and with a bit of heat. It would be refreshing to change temperatures for a day. 😊
Corn pico de gallo and chicken – yummy!

Hi Dawn, I hope that you enjoyed the corn pico with your fish, I think it would be a nice combination.
Karen! It was SO YUMMY! Definitely we be another “repeat” – gifted to me from you!!
I like the idea of leaving the corn raw. Extra crunch and flavor.
Hi Suzanne, I agree that when the corn is fresh and tender that it really doesn’t need to be cooked. The flavor is sweet and delicious.
Looks fabulous, Karen! Like summer on a plate.
